Black elder, which is also known by its genus Sambucus, is a tree-like shrub that blooms from June to August with star-shaped, white flowers. By autumn, the plant produces small purple-black fruits that are harvested by snipping off entire clusters of berries. Unripe berries may cause stomach upset, but when properly prepared (cooked or extract), the ripe berries are safe to eat.

Elderberries are rich in vitamin C and antioxidants and are a popular remedy for the common cold. As an antiviral, elderberry can significantly shorten recovery times for cold and flu symptoms, and the berries add a dark, fruity flavor to extracts, syrups, and lozenges.

Traditionally, elderberries have been used to make preserves, cordials and elderberry wine — long before they became a popular herbal remedy. They are also used to make a dark blue-purple natural dye.
