One of the most important herbs in Chinese medicine, astragalus root is a “strengthener of qi” used to make the body’s natural defenses stronger. In Western medicine, it is an adaptogen, an herb that helps strengthen all body systems, especially the immune system.

Traditionally, astragalus root is only used for a few weeks during an illness. Studies show that it improves immune function, and herbal healers recommend it to promote heart health and treat respiratory infections.

Astragalus roots are thick and fibrous with a dark brown skin and yellowish core. Growers peel and dry the carrot-like roots, then cut them into slices. The dried roots are often boiled in a decoction or simmered in soups where the mildly sweet, licorice-like flavor does not affect the dish.
