Lavender is one of the most aromatic herbs. Its fragrant violet-blue flowers grow in spikes above silvery green foliage and remain potent long after they are dried.
The sweet, floral scent of whole dried lavender flowers has a calming effect and is used in aromatherapy to treat anxiety, restlessness, and insomnia. The flowers are also antimicrobial — lavender comes from the Latin word lavare, “to wash,” a reference to the flower’s purifying properties — and are popular for soaps, sachets, potpourri, hair care, bath and cleaning products. Culinarily, lavender is often used for desserts and meat rubs, as well as being one of the ingredients in the classic herbs de Provence blend.
Extra grade flowers are blue-grey in color and contain slightly more stems and leaves than Ultra grade flowers, which have a vibrant purple-blue color. Since the aromas are equally potent, Extra grade flowers tend to be used for cooking and crafts where visual presentation is less important.
