Irish Moss Powder (Pacific)

Chondracanthus chamissoi, commonly called sea chicory or Irish moss, is a red seaweed native to the cool coastal waters of the Pacific Ocean. The seaweed has short, frilly fronds that give it a moss-like appearance. Although red or purple in the wild, the dried powder is finely milled and appears much paler.

Irish moss is a source of carrageenan, a gelatinous substance widely used as a thickening agent for foods. Traditionally, carrageenan is used to thicken puddings, custards, and jellies or as a demulcent in medicinal broths. The rich, soothing texture of Irish moss also makes it a popular ingredient in skin soaps, lotions, and creams.

As a nutritional supplement, Irish moss contains every mineral needed for human health, including calcium, magnesium, potassium, iron and zinc. It is especially rich in iodine and should be used with caution by anyone with thyroid disease.

Powdered Irish moss or Irish moss flakes may be added directly to soups or smoothies or boiled to extract carrageenan. It has an earthy aroma and a bland, almost undetectable flavor when cooked.
